No Bake Energy Bites

1 cup old fashioned oatmeal
⅔ cup unsweetened coconut flakes
⅓ cup honey
½ cup crunchy peanut butter
1 tsp. vanilla
½ cup ground flaxseed
½ cup mini chocolate chips
1 tb. chia seeds



Stir all ingredients together in a bowl until thoroughly mixed. Let chill in the refrigerator for at least 30 minutes. Once chilled, roll into balls, about 1 inch in diameter. Store in airtight container, and keep refrigerated. Makes about 20-25 bites.
